Meeting Minutes - April 17, 2008

Meeting called to order at 7:00pm.

Ladd Nelson, Bob Noel, Jeff Sanderfield, Chris Sanderfield, Ron Markus, Barb Markus, Al Ronek, Nancy Ronek, Kim Maiers, Don Schwenker, Larry Ewert, Roxanne Gartner (not all attendees present for all motions made and voted upon)

Old Business

  1. OPH discussions:
    • Received approval from Make-A-Wish Foundation of Iowa for our event flyers and the use of their name.
    • Discussed sponsorship levels.
    • Don showed us a new logo for our club and the event.
    • Motion by Don, second by Ron to purchase 100 t-shirts with sunset for sponsorship advertising approved by the board and pending at least one corporate sponsor. Option to purchase additional shirts based on ticket sales. Motion passed 10-0. Note that this motion will be amended and voted on at our next business meeting due to some changes in the sponsorship levels since this business meeting. This does not change the part of the motion that allows the purchase of 100 t-shirts and the option to purchase additional shirts.
    • Discussion of posters.
    • Motion by Ron, second by Chris to approve the flyer and have it sent to Adam at Kirchhoff Distributing for printing. Motion passed 10-0
    • Discussion of table centerpieces. Barb had a sample that she put together. Great job Barb and others who have given ideas for the centerpieces. Barb (and Nancy?) will continue working on the centerpieces.
    • Discussion of tickets for the event (entry and raffle). Pre-sale locations/businesses discussed.
    • Discussion of nametags for club members and attendees. It was decided to KISS (keep it simple stupid).
    • Discussion of use of LandShark buckets being provided by Stu.
    • Discussion of hotel room welcome gift/s.
    • Need to update the website for OPH 2008. Ladd working on this.
    • Discussion when and where to put together the baskets. If interested in helping, please contact Ron or Barb.

New Business

  1. Discussed current taxes. Also the advantages/disadvantages of 501(c)3 vs 501(c)7.
  2. Introduced new member Roxanne Gartner.
  3. Trevor update given.
  4. OPH sponsor Carlos-O-Kelly's is having a radio station at their location on March 3rd, 8-11pm. We have been told that we can possibly have some air time for OPH 2008.
  5. Wing Fest contest on Aug 9th. Discussion of putting together a team/recipe to enter. More info to come in the near future.

*A special recipe for all of you. This came out of the VUE section of the newspaper and is a LandShark Lager recipe.

Crab Stuffed Jalapeno Poppers:

12 large jalapeno peppers, 4oz crabmeat (well drained), 1/3 cup minced red onion, ¼ cup minced green bell pepper, ¼ cup cream cheese, ½ cup all purpose flour, ¾ cup LandShark Lager, oil for frying, and additional all purpose flour.

For garnish: ½ avocado (peeled and diced), ½ cup salsa, and 1 Tbsp mayonnaise

Start just below the stem, cut jalapenos lengthwise in half, leaving stems attached. Remove the seeds. Place jalapenos in a medium sauce pan. Cover with cold water and bring to a simmer. Drain and repeat process. Dry the jalapenos.

Combine crab, onion, bell pepper and cream cheese in a small bowl. Season with salt and pepper. Fill jalapeno cavities with crab mixture. Press the pepper halves together to compress the filling. Can be prepared ahead, cover and chill.

Place ½ cup flour in bowl, gradually whisk in beer and let stand 30 minutes. Heat oil in heavy deep pot to 375°. Whisk batter until smooth. Dredge jalapenos in flour, then dip into batter to coat completely and deep-fry until golden brown. Remove peppers from oil and allow to drain. Combine avocado, salsa and mayonnaise in a small bowl and use this to garnish the peppers.
